Lassi

 This sweet Lassi which I make at home is very light and can be had after a Heavy meal . It is usually served in  Huge glasses topped with nuts and fruits .Some tend to have it with Parathas and Samosa chats. It is especially relished in hot summers because of its cooling properties.For Flavouring , you can add cardamom powder or rose water. Garnish it with cardamom powder and some sliced almonds while serving. Adding saffron to the lassi is optional.


Lassi can be consumed as just sweet drink, but practically it is an excellent accompaniment for spicy food. as a matter of fact, any curd or butter milk based drink can reduce the heat of spicy food gives a calming effect to the stomach and mind too. in addition, it is scientifically proven, that yogurt helps to improve digestion after heavy meal. in addition it is usually topped with dry  fruits like badam and pista which is obviously good for health.


Ingredients:

1. Curd -1 liter

2. Cardamom 6 slices

3. Sugar as per taste

4. Nuts for Garnishing

5. Ice water

6. Saffron -few strands

7. Rose water 2 spoon

Instructions:

1. In a bowl or pan, take 2 cups fresh chilled yogurt. I used homemade curd.

2. With a  blender or wired whisk just mix the curd till it becomes smooth.

3. The curd should be smooth before you add other ingredients to it.

4. Add 10 to 12 tbsp sugar or as required.

5. Take 8 to 10 cardamom pods and crush them. Remove the husk and crush the seeds.
 
6. Crush a few  saffron strands.
 
7. Then add 2 cups chilled water. You can also add 2 cups chilled milk, instead of water. 
 
8. The consistency of this lassi is neither thin nor thick. If you want a thick lassi, then add 1 to 1.5 cups water.
 
9. Keep on churning till the sugar dissolves and you see a nice frothy layer on top.
 
10. Add ice cubes and mix them again.
 
11. Pour lassi in tall glasses and serve.
