RASAM
Rasam is a South Indian dish that is tangy and spicy and can be either served as a soup or paired with rice for the main course. There are many varieties of this dish made in different regions of south India. There is Paruppu Rasam , Tomato Rasam , Beetroot Rasam, Pepper Rasam, Raw Mango Rasam . Here, is the basic Rasam Recipe and My Own Magical way of Making it .
This Humble and Comforting Soup posses a lot of Medicinal Values as it is simmered with Spices. This Rasam is also suitable to serve for Baby and Toddlers mixing it with it Mashed Rice . It aids digestion and also helps in relieving the cold. It can also be served with steamed rice along with a side vegetable dish or even along with vegetable sambar.
INGREDIENTS:
1.Lemon sized Tamarind
2. Tomato - 2
3.Turmeric Powder -¼ tbsp
4.Warm water
5.Cumin seeds - 3 tbsp
6.Black pepper - 2 tbsp
7.Chopped garlic - 6
8.Oil - 2 tbsp
9.Mustard seeds - 2tbsp
10.Coriander Leaves
11.Red Chillies - 2
12.Curry Leaves
13.Turmeric Powder
INSTRUCTIONS:
1. Heat oil in a pan. Crackle the mustard seeds first.
2. Add the curry leaves, red chilies & asafoetida and fry for some seconds till the red chilies deepen their color.
3. Temper on a low flame , so that the spices don’t burn
4. Saute till the Tomatoes burn .
5.Then add the semi coarsely powdered cumin, black pepper and garlic with turmeric powder.
6. Stir, add the tamarind pulp. Add water and stir well. Season with salt.
7. Just let the whole rasam come to a gentle boil uncovered.
8. Serve rasam hot, plain or with steamed rice.
