My experience cooking Dum Briyani
Months back,I saw this video on my youtube feed which really left me drooling.It was the recipe of Aloo Chole Dum Briyani.At the end of the video,I so wanted to make it.One morning I started making the Dum Biryani and finished cooking by afternoon.It was three hour tedious process.
I started by prepping the ingredients.First things first,so I started the process by soaking the Channa dal(Chole) which is the hero of this recipe.After that it was three separate process where the potatoes(Aloo) and Channa(Chole) gravy,basmati rice and fried onions needs to be cooked.I started doing them one by one.
I started cooking the Channa in a pressure cooker.The most intriguing thing in this whole process is this part.The recipe was to cook the Channa dal with some tea powder.I have no idea why I want to put tea powder to it.But I did,I cooked the Channa with tea powder and it gave the Channa dal a dark brown colour.Then I got the reason,it was to give a colour to it.
Then I started cooking the rice.It was easy.I boiled the water and added all these dry aroma giving spices and then adding basmati rice to it.Once the rice was 75% done I strained it.
Then comes the gravy part.I followed the recipe completely from adding the dry spices,onions,tomatoes,all the masalas and not to forget potatoes and Channa dal to the very last part of adding garnishing it with coriander leaves.
Finally it was the assembling part.This part is full of fun where I started layering the onions,rice,gravy in a pot until it reached the brim.I completely enjoyed this part.And finally,I covered that pot with a lid and covered the lid with dough.
It was surprising to me that I followed the recipe sincerely and got it done.Because I have never strictly followed a recipe before.But this time I badly wanted to stick to the recipe as it was a long process and I really don’t want to waste three hours messing around the recipe.
Finally after getting it all done,it’s the moment of truth,the tasting..It really came out very well.There is a technique involved in serving this Dum Biryani where you need to showcase the white and the gravy mixed rice properly.The rice,gravy and caramelized onion all together is an explosion of flavour in the mouth.At every bite,this Dum Biryani gives a different taste where either the plain rice or gravy gives its flavour to the tongue.
And to my complete surprise I found the flavour of the tea powder so strong.It was not only for the colour.It gave that strong flavour to the recipe that after every bite I want to take another bite.That taste lingered in my tongue manipulating me to eat more.
The whole experience of cooking this recipe was such an amusement.That three hours was full of curiosity awaiting to know how the dish had come out.And finally my take on cooking Dum Briyani was a success!!
